Pan M. Keung, 86, of Springfield passed away peacefully on Friday, October 31, 2025, at home surrounded by her children.
Born in China, Pan was preceded in death by her husband, Chi S. Keung, father, Shu-Ying Wang, and mother, Kuei-Ying Lee.
She is survived by her four children, Liza (Thomas Olsen),
Anne, Jim (Heather) and Walter; two grandchildren, Edie and Ethan Keung.
Pan moved to the United States from Hong Kong with her family five decades ago in pursuit of a better future. Together with Chi, she owned and operated the Great Wall Chinese Restaurant in Springfield for many years before retiring 28 years ago.
Pan expressed her deep love for her family through cooking, often single-handedly preparing delicious seven-course meals. Her question to her children was always “Have you eaten yet?” – an expression of love. She also had a green thumb and would spend countless hours in her backyard. Pan was incredibly crafty - sewing and knitting all her children’s clothes when they were little.
Though she stood just five feet tall, Pan was tough. She faced life’s challenges with quiet strength and always made sure her family was cared for. She was deeply loved and will be deeply missed.
Private service will be held. In lieu of flowers, memorial contributions may be made to The American Cancer Society or The Alzheimer’s Association.
